Mother's Day Gift Ideas

From Homemade to Happily Bought

I have been a mommy to my three beautiful daughters for 33 years now gulp), and one thing I never seem to have enough of is time with my girls. I am at that point in my life where experiences and time with family and friends are so much more important to me than gifts. But- fear not, if you cannot be with your mom this year, here are a few ideas that she will love that are homemade or share the idea that time well spent is the best gift of all.

Vanilla Rice Pudding

I love the idea of a cozy bowl of warm rice pudding on a rainy Spring afternoon. There is something so comforting about the vanilla notes, creamy rice and rich textures. Here is my new recipe. I hope you love it.

Ingredients:

  • ¾ cups uncooked Jasmine Rice
  • ¼ tsp salt
  • 1/3 cup sugar
  • ⅔ cups golden raisins
  • 2 teaspoons vanilla bean paste or vanilla extract
  • ½ tsp cinnamon
  • 1 TBSP butter

Instructions:

  • In a heavy-bottomed saucepan, bring the milk to a boil. Stir in the rice, salt, sugar, golden raisins, and mix well. Cook, covered, on low heat, for 20 minutes.
  • Stir in the cinnamon and vanilla. Cover and let rest, off heat, for 10 minutes. With a fork, stir in the butter.
  • Serve warm and sprinkle with more cinnamon. Store in the fridge, covered for up to 1 week.
